Ils peuvent \u00eatre d\u00e9crits comme des compos\u00e9s polyhydroxyl\u00e9s contenant une liaison \u00e9ther. La plupart des sucres sont optiquement actifs, et cela vient de la pr\u00e9sence de carbones substitu\u00e9s de mani\u00e8re asym\u00e9trique dans le sucre. Dans un environnement aqueux, les cycles peuvent prendre deux formes.
